Easy Baked Sweet and Sour Chicken
It is always great to have an Easy Baked Sweet and Sour Chicken dish that you can quickly pull together for family and guests who turn up unexpectedly at dinner time. Serve this dish with orange rice made by substituting one-half of the water with orange juice. You can do this with quick rice, white or brown rice or most rice (except wild rice).
This recipe is so quick, and it is made with things that are just sitting in your fridge or cupboard such as ketchup and sugar. So you can probably pull it together at the last minute. You could even make this with already cooked chicken, and it will take even less time to prepare. Just watch the ingredients in the oven and be sure to baste and re-baste so the flavors really infuse the chicken. Spinach, Swiss chard, Arugula will all take the flavors of sweet and sour well. They can be quickly steamed in barely one-half inch of water in any wide pan with a lid. Bring the water to a boil, toss in some salt and the torn veggies, then steam them for about one minute until they are just wilted. Times will vary according to the size of the pieces you tear and the vegetable. Baby spinach will be ready in about 30 seconds. Swiss Chard can take up to several minutes. But make it last to ensure it does not get over cooked.
