This fungus is cheap to buy now (once mushrooms were quite a delicacy and very expensive, but most kinds are affordable today) and they are so easy to make. You just stir fry them in a bit of olive oil, salt and pepper until they are just tender. Spoon them on top of the stew and potatoes, and you have a meal good enough to serve your best guests.
