If you are able to do so, use fresh squeezed lemons in order to make this recipe for this Easy Lemon Meringue Pie. Fresh squeezed lemons will always provide a nice snap and terrific tang to this recipe and will lighten up the base pudding and nicely complement the classic meringue topping that is made here. Fresh lemons just have no competitors when it comes to delivering big taste to any dish where they are called to be used. So when ever you have the need for lemon juice, try to choose fresh lemons. Lemons will keep in your fridge for some time, even organic varieties, so think about buying them often, and using them where ever you can. They always bring great flavor to what ever savory or sweet dish where they are called for. And they full of vitamin C, an important anti-oxidant that contributes to our good health.

This easy meringue is much more pudding like than the more translucent original lemon filling that our mothers used to make lemon pie, even if you used the commercial mix rather than making the pie from scratch with lemons, butter and so on (which is unbelievably better). But this is a quick dessert that will still taste terrific, especially with the home made meringue. When you put the pie back in to the oven to brown the meringue, stay at the oven. This topping burns very easily, and is ruined if it gets too dark. Some things may be edible when they have a bit of black crust, but meringue is not one of them.

This is a great and quick little pie that you can make up very easily and when ever you are in the mood for some lemon. Lemon is a great flavor and one that most people enjoy. So try this recipe for your family soon. It will taste great.
