This recipe uses a readymade yellow cake mix to keep things simple but if you have a personal favorite cake recipe of your own then go ahead and use it. You can also choose a white cake mix or even chocolate cake mix for a change of flavors. A much healthy option in the place of a regular cake mix cake would be to substitute it either with store-bought gluten-free cake mix or sugar-free angel food cake. When you’re done setting the layers together, let it sit in the fridge for several hours so that it sets well entirely and the flavors get even better the next day. You can serve it with mixed berries or eat it on its own. For an extra kick of flavors, you also add a hint of Malibu coconut rum or any spiced rum to it.

If you want to replace ‘Cool Whip’ in this recipe with something more healthy, you can use heavy whipping cream and organic sugar and whip together on a high setting till peaks of cream form. For added stiffness, combine a tablespoon of instant vanilla pudding while beating the ingredients. By adding instant vanilla pudding, you can prevent the runny texture in the whipped cream and add the firmness which is what you want in this recipe. A few other ideas that might help are using condensed milk with organic whipping cream or try beating cream cheese together with sugar. Pineapple and coconut make an outstanding combination so you could also add coconut cream or even coconut ice cream. The possibilities are just limitless!

A note of caution that some brands of canned pineapple may have about 1 1/4 cup puree but this recipe calls for 16 ounces or 2 cups of crushed pineapple. You may have to measure the can for precision to avoid any runny texture or baking accidents in this recipe. Pineapple is an exceptional fruit to fuse into dessert recipes because of its succulent texture with natural sugars that add a pleasant sweetness. Apart from the taste, there is a right amount of nutrition in this recipe that comes from the addition of pineapple. Pineapple is a tropical fruit that originated in South America and perfect to eat during hot summer days, and that's precisely what pineapple desserts are for. The nutritional value of pineapple essentially comes from the enzymes present in it that are highly anti-inflammatory, muscle relaxant, and aid digestion. Other quintessential pineapple nutrients are vitamin C and A. For the best quality of pineapples, always watch for Costa Rican or Hawaiian grown ones.
