Easy Pina Colada Pudding Cake

Melissa from Chin Deep says that she makes it every year around Easter time and her entire family looks forward to it. To make it really easy, she uses a box of pineapple cake mix she uses Pillsbury cake mix, but you can use any brand you find. You will also need a box of instant coconut cream pudding, eggs, rum, vegetable oil, coconut extract, cream cheese, crushed pineapple, marshmallow fluff and rum extract. If you're worried about using alcohol in the cake because it will be eaten by kids, someone who is allergic or doesn't drink, you can use the rum extract if that would be better. Although most extracts contain some alcohol too. The thing is, the alcohol is burned off while the cake is baking in the oven, so there will just be a hint of the flavour. You can also opt to leave it out too if you like.

To make the boxed cake mix even better, they added in the pudding and the eggs to give it some more moisture and the pudding will also give it a coconut flavour. They even add in more coconut flavour too with the coconut extract. If you wanted, the vegetable oil you use could be coconut oil instead of canola oil. Coconut oil is an excellent substitute for butter in baking recipes as it is completely dairy-free and it has a high burning point meaning it will not become toxic when it gets too hot. It also creates such a nice buttery flavour in dessert recipes too and can also be a great butter substitute in cookie recipes as well. There are also dairy free pudding options as well as dairy-free cream cheese for the topping if you wanted to make this healthier.
