This No Bake Eclair Cake is one of the easiest desserts you will ever prepare! For those that love to make desserts that mainly require assembling some pre-made foods then this is the recipe for you!

This recipes uses instant vanilla pudding mix, cool whip, milk, graham crackers and a tub of chocolate frosting. It does not come any easier than that. Recipe contributor and blogger Brandie from 'The Country Cook' says that whenever she makes and takes this dessert to any function this is one of the first desserts to disappear from the table.

For those of you that love to use all the instant options then you can make it as it is. For any of those from scratch cooks out there, if you would prefer to make your layers from scratch then you can easily replace the cool whip with stablized fresh whipped cream, you can make homemade pudding and you can make your own chocolate frosting.

It will work well either way, as once you get to the recipe all you need to know is the proportion needed for assembly.

A traditional clair is a long French pastry made from a choux pastry. A choux pastry is very easy to make, and it's hard to go wrong with it. Choux pastry is not fussy to prepare, and the shapes are forgiving so it is not difficult like perhaps a fancy pie crust. The traditional clair is filled either with a homemade custard or pastry cream, and the top is coated with chocolate. It is easy to understand why this quick to prepare no bake eclair cake is so popular as it offers similar flavors.
