The cookies are baked until golden brown and then dipped in melted chocolate and then topped with caramel sauce and shredded sweetened coconut. Coconut flakes have a natural sweetness and a nutty flavor that adds a distinct taste to dessert recipes. The best part about these easy homemade cookies is that you don’t need to refrigerate the cookie dough or use a mixer. To make these easy cookies healthier, you can replace the all-purpose flour with gluten-free flour, almond or coconut flour. Coconut flour is one of the top preferred flours among other grain flours because to begin with it is not a flour but rather coconut that is finely ground. Coconut flour is low in carbs and healthier because of its fiber content. If you plan on using either almond or coconut flour, just remember that the proportions vary. Gluten-free flour, on the other hand, can be used as a direct substitution for all purpose flour. Plus, it does not change the taste or flavor in this recipe. A healthier option for semi-sweet chocolate chips is dark chocolate. Dark chocolate is an incredible source of antioxidants, improves cardiovascular health along with other essential nutrients like fiber and iron present in it. Dark chocolate is also lower in calories because it goes through minimal processing with little sugar added to it.

If you do not have a cookie cutter, just a glass positioned upside down to cut the dough. Alternately, you can use a cookie scoop to ensure that the cookies come out evenly sized. Always make sure to use a parchment paper or cookie sheet so that the cookies come off easily from the pan. Also, the parchment paper makes the cookies spread evenly. Always place the cookies at least 2 inches apart before sticking them in the oven since the cookies rise and spread while baking. Lastly, do not overbake the cookies or you might dry them out. Let the cookies cool completely to room temperature before dipping them in the melted chocolate.

You can find unsweetened coconut at any health food store or baking store and sometimes called as ‘desiccated’ coconut. You can make shredded coconut in your kitchen by throwing coconut bits into a blender or a coffee grinder and blend them until you get a coarse texture. Besides the essential health benefits that unsweetened coconut nutrition has to offer, it is also low in carbs and supplies lauric acid to your system with antiviral, antibacterial and antifungal properties.
