Fettuccine with Shrimp Sauce
Fettuccine with Shrimp Sauce is a delicious combination of rich cream, shrimp and tomato served over a fettuccine noodle. It is a great combination of flavors. Although you might not intuitively put cream with tomato, the cream smooths out the flavor of the tomato but still allows the robustness of the fruit to come through. This is an easy dish to make and takes no time at all to put together, especially if you read the recipe over and have the ingredients ready to add as needed.
Cooking your pasta to the right level and not beyond is an important step in all pasta dishes. The term used to describe doneness in pasta comes from the Italian expression, el dente, meaning, to the tooth. Pasta, cooked properly, retains a definitive bite, but not a crunch. That is, the pasta should be cooked all the way through, but only just barely. The pasta (or rice and even vegetables) should remain firm, but not hard, when you bite it. For pasta, you can often tell that the el dente point is close by breaking a piece of the pasta in two. Look carefully to see if water has fully permeated the noodle. If it has, chances are that the pasta is fully cooked.
This is a lovely dish filled with protein from the shrimp and cream, great carbohydrates from the noodles and plenty of love and effort from the cook in the kitchen. Don’t skip the parsley garnish, which offers an important flavor counterpoint to the richness of the sauce. Your family will enjoy this terrific dish on days when they need some extra oomph. Try this dish soon. It will become a mainstay in your family menu.
