Fluffy Cottage Cheese Pancakes
How about serving these Fluffy Cottage Cheese Pancakes for breakfast tomorrow? This pancake recipe is full of moist and fluffy goodness - and, with the added benefits of cottage cheese, it’s bound to give you the perfect start on the day. True, many folks these days are resorting to pancake mixes that come out of a box, but when it comes right down to it – home-cooked pancake recipes are superior on so many levels. They’re much higher in nutritional content, are healthier to eat, and they simply taste better. 1 cup all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2 Tablespoons granulated sugar
1 cup cottage cheese
1/2 cup milk
2 Tablespoons olive oil or vegetable oil
1-2 Tablespoons oil for cooking, either olive or vegetable oil
Using a large mixing bowl, stir together the flour, baking soda, salt and sugar.
In a medium size mixing bowl, beat the eggs either with a whisk or an electric mixer to combine well.
Add the cottage cheese, milk and oil and stir in until just combined.
Heat a tablespoon of oil in a large skillet over medium heat.
Spoon 1/4 cup of batter onto the heated pan and cook, flipping once or more if needed as you do not want to burn the one side. Cook until golden brown.
You will need to work in batches, don't overcrowd the skillet.
Transfer to a serving dish and enjoy! Delicious with a little sour cream.
