Fried Corn

This is a recipe called fried corn, but it is really more a creamed corn, made extra delicious by using fresh corn and home made ingredients. It is quick and easy to make and serves up beautifully against meats, chicken, fish and just about anything else you might put to it. It is also wonderful with smashed potatoes made with garlic and mushrooms. Yum.

Any way you make corn it carries a lovely sweet and creamy flavor in to the dish where it appears. On its own, of course, it is irresistible, especially when eaten fresh from the cob. How many late summer days do we spend on our back decks, munching butter slathered corn that dribbles down our chins, on to our fingers, and all over the table (where our doggies do their best to lick it up!). Corn is also a good source of fiber and protein (yes, protein) as well as vitamin C, thiamin and niacin, to name only a few of the vitamins and minerals you get when you eat this lovely vegetable.

There are hundreds of varieties of corn, and you can enjoy almost every one of them (except the corn grown for cows, which tastes awful). Here, the corn is fried and then milk is added to it to create a wonderfully buttery and sweet and creamy dish, nearly a thick stew or soup. You could probably eat it for lunch with a great green salad on the side and a thick slice of bread. For dinner, it is a super accompaniment to just about everything on the menu from meatloaf to shrimp to chicken and beyond.
