Glazed Apple Cinnamon Oatmeal Bread
This is a perfect all round Glazed Apple Cinnamon Oatmeal Bread that fits in to almost every meal. It makes a great morning bread that kids and family can grab and eat on their way out the door. It is sweet enough that finicky morning eaters will agree to at least a bite, and then won’t stop until they are done. It is perfect for mid-morning, and can even be eaten as a lunch, served with yogurt and fresh fruit. Eat it mid-afternoon the same way. It is a lovely sweet bread.
As well, this bread offers plenty of good nutrition. The Greek yogurt is added to give the bread more moistness, but it also bumps up the protein, adding calcium and magnesium as well as other nutrients at the same time. The recipe also uses oats, a fantastic source of fiber and other vitamins and minerals. The oats also provide some nice texture and a bit of color to this recipe. Finally, of course, applesauce is a big part of the ingredients here. Choose unsweetened varieties, and even varieties that are not cooked (look in your organic food store, often in the frozen foods section) and so the goodness of the apples has been well preserved. Cinnamon is also another wonderful flavor that works well with apples and oats. Together these ingredients create a tender and lightly sweet bread that you can use everywhere.
This bread will also freeze well. That means you can double the recipe and put some away for a day when you need something quickly and have not had time to bake. Try this bread soon. It will become another of those great go to recipes that people will ask for time and again.
