Ground Beef and Black Bean Enchilada Skillet

Of all the super meals that can be made using ground beef, cheese, corn in some way or other, and cheese, Ground Beef and Black Bean Enchilada Skillet, is among my top favorites. It has a wonderful blend of meat, cheese, beans and usually something sharp, as here, cilantro and lime, that provides a great contrast in the flavors. This dish is filling, and covers all the bases when it comes to providing your family with a balanced and filling meal. Served warm from the oven with plenty of garnishes such as avocado or guacamole, sour cream or yogurt, olives, chives and tomatoes (and just about anything else that you enjoy) this dish becomes one that every one will find something to enjoy.

This dish uses black beans, one of the most important and nutritious foods that you could serve your family. Try and incorporate them in to several meals each week, if you can. They can be mashed with olive oil, cumin, garlic, salt and lemon or lime to make a fabulous dip you serve with bread (your family will love it). They are an excellent source of protein and fiber, are loaded with potassium, iron, magnesium and plenty of other minerals and vitamins, and are loaded with phytonutrients that hold anti-oxidant properties. Black beans are an important food to eat regularly. Beef and cheese add more protein to this meal and plenty of great taste. Combined together, these ingredients form a lovely base for this meal. Topped with tortillas (made from corn, if you like) and other great ingredients this is a delicious dish.

You can serve this dish as a snack food, too. Just serve it with chips and be sure the dish is well chopped up. It is fabulous. Enjoy.
