Ham Cheese and MORE Pasta Salad
Like most people who lead busy lives, you're probably always on the lookout for easy recipes. This simple salad recipe from Brandie at The Country Cook is perfect for any occasion and can be served as a side dish or as a meal all on its own. This pasta salad recipe has more than just pasta and veggies in it too. It also has some ham, cheese and peaches. Now peaches might sound like a weird option to put into a pasta salad recipe, but it's something you may want to try out just to see how it tastes. Using canned peaches helps you out with this recipe since they are all chopped up and ready to go in the simple salad recipe along with all of the other ingredients. You could also use frozen peaches or fresh peaches if you like. Just be sure to chop them into smaller pieces first. Also, whenever you're buying peaches, it would be best to try and buy them organic since they are on the Environmental Working Group's Dirty Dozen list along with nectarines and cherries too. When foods are on this list, it means that they were tested for pesticides and chemicals and came back with residues or traces of both. So that's why it's going to be important to buy these fruits and veggies organic as often as possible.
The other ingredient in this salad is the ham, which is also a good idea to try and find from an organic pasture-raised source. Animals from these organic farms are generally raised better in all regards, given healthy food and allowed to roam free, and they are not usually given a bunch of antibiotics, and hormones like animals from other farms are. Brandie used some leftover ham that she had in her fridge which is what you could do too. That way nothing goes to waste in your kitchen. If you're not a fan of ham, you could opt to leave it out of the recipe too. Then, you will also want to dice up your cheese into cubes, and she uses American cheddar cheese, but you could use a different kind of cheese too. Mozzarella might go well with the peaches and ham too. She also got some lettuce in there that she had in her fridge, and some cheese tortellini. You can use any type of pasta you like, but the tortellini tastes really good especially with all of the cheese inside. Penne noodles might also be good or even classic macaroni noodles. You could also use gluten-free noodles if you prefer, to make it okay for gluten intolerant people to eat.
She then puts a poppyseed dressing on her salad once everything is in a big bowl and tosses everything in the dressing. This will give the salad a nice, sweet flavour which will actually complement the ham, cheese and pasta nicely. So this isn't your typical pasta salad recipe, it's a simple salad with a fun twist of fruity and sweet flavours mixed with savoury and salty flavours.
