Caramelized onions are so delicious they are almost hard to describe. The process takes some time, and you need to be very patient, if you want the onions to turn out their best. This recipe calls for sweet onions for the recipe, but you could consider ordinary yellow onions, too. The onions are cooked in (in this recipe) butter and bacon fat (just some) until they become, well, caramelized. That means the onions are really well cooked, and quite dark brown, but not crusty, although they may be heading in that direction. It could take as much as 45 minutes to make them properly. Do not under cook the onions. They will have such sweetness and depth of flavor, it will be quite surprising if it is your first time making them. And, these onions work with so many things. If you make a big batch and put them in the fridge, they can be used on sandwiches for some tang, served with meat, chicken (fowl) or fish, and on veggie sandwiches to give them some real pop.
The other great tastes in this dip include Gruyere cheese. This cheese changes flavor as it ages, which, of course, happens to many great cheeses. When it is young, this cheese is sweeter with a bit of saltiness to it including a creamy and nutty taste that is fabulous. As it ages, the flavor becomes more robust and complex.
