Coconut Whipped Cream Recipe
Many of us are looking for dairy free, vegan options for our dessert recipes like this delicious Coconut Whipped Cream Recipe from Grandmother's Favorites. It is simple to make and is a great Cool Whip alternative. This recipe can be used as as substitute for 8oz or 1 tub of Cool Whip. A note about saturated fat: Although coconut milk is a vegan food that is high in saturated fat, it is also a non-animal product and therefore has no cholesterol. Some experts argue that the saturated fat found in coconut milk is not as damaging to the human body as the saturated fat found in animal products.
Makes - 2.5 cups (8oz) - equivalent to a tub of Cool Whip
1 tablespoon maple syrup
1/2 teaspoon vanilla extract
1 can (14oz) full fat coconut milk refrigerated overnight
Chill a glass or metal mixing bowl for 10 minutes in the freezer.
Scoop out the top layer of the coconut milk that has hardened, the fatty layer.
Stop as soon as you reach the water at the bottom of the can; don't include anything but the solid cream.
Note: if your coconut milk didn't harden, you probably just got a dud can without the right fat content. In that case, you can try to salvage it with a bit of tapioca flour - 1 to 4 Tbsp - during the whipping process.
Place in a mixing chilled mixing bowl.
The liquid portion can be saved for a smoothie, dressing or stir fry and is delicious for many recipes so don't throw it away!
Whip together coconut milk with vanilla and maple syrup.
Best served immediately if not refrigerate up to 3 days. Use immediately or refrigerate - it will harden and set in the fridge the longer it's chilled. Will keep for up to 1 - 2 weeks!
Being refrigerated will make mixture harden just whip again until creamy again.
