Easy One Bowl Grape Cake
Are you wanting to eat healthy food as much as possible? This Easy One Bowl Grape Cake gives you an interesting cake recipe to try. This cake calls for 2 cups of seedless grapes. The nutritional value of grapes offer some healthy benefits such as they are low in saturated fat, cholesterol and sodium and offer good sources of Vitamin C and Vitamin K. Grapes contain phytonutrients which seems to aid in longevity. This cake recipe is one of those simple baking recipes calling for basic ingredients. You can easily substitute almond milk, coconut milk or rice milk for the regular milk it calls for if you are not eating dairy. Whenever possible choose to purchase eggs from Happy Chickens that are raised humanely out in the open where their feed touch the soil and they see the sun. You are what you eat and you want to feed yourself and you family the best you possibly can. This recipe calls for granulated sugar, but cane sugar is a wonderful substitute. When you purchase your grapes and bring them home you should always wash them before eating as with all fruits and vegetables. A very good practice to get into is to fill you kitchen sink with cold water and add about 1/2 cup white vinegar to the water. Place the grapes in the water and let them sit for about 5 minutes, then you can put them into a second sink of cold water to rinse them off. Place the washed grapes into a bowl lined with either a clean dish cloth or paper towels to absorb the moisture that drips off them.
4 Tablespoons unsalted butter, melted
1 1/2 cups all purpose flour
2 large eggs, room temperature
2/3 cup granulated sugar
1/4 cup grape seed oil
1/3 cup milk
1/2 teaspoon pure vanilla extract
3/4 teaspoon baking powder
1 pinch of sea salt
Grated zest of 1 lemon
2 cups fresh seedless grapes
Preheat oven to 350 degrees F.
Grease a 9 inch round cake pan.
In your food processor mix together all the ingredients together.
By hand, stir the grapes into the batter.
Spoon the batter into the prepared cake pan, and smooth out the top with a spatula.
Bake for 50-55 minutes. Poke a toothpick in the center and when it comes out clean the cake is ready.
Remove to a rack to cool. After 10 minutes, run a knife along the sides of the pan.
Serve with a bit of plain or vanilla yogurt.
