Makes about 3 cups dip
Serves 6 or more
1 cup sour cream
1 cup mayonnaise
2 cups of fresh or 1 package frozen spinach thawed, drained and patted dry with paper towel
1 can artichoke hearts drained and chopped
1 teaspoon lemon juice
2 Tablespoons of chopped fresh or dried parsley
1/2 cup freshly grated Asiago cheese
Preheat oven to 300 degree F.
If using fresh spinach, put into a pot of water, bring to a boil and cook for 5 minutes.
Drain and squeeze out the water. Chop into smaller pieces.
In a mixing bowl stir together the sour cream, mayonnaise, spinach, artichokes, lemon juice,parsley and cheese.
Put the mixture into a 1.5 qt. baking dish, cover with tinfoil and place into the oven.
Bake for 2 hours.
Serve with freshly baked breadsticks and raw vegetables.
