2-300g chicken breasts, skinless and boneless
1/4 cup rice bread crumbs
1/4 cup ground almonds
1/8 cup flour (all purpose or gluten free)
Preheat the oven to 350F.
Line a baking tray with damp parchment paper.
Set up 3 bowls.
Bowl 1: Flour
Bowl 2: Egg that has been scrambled
Bowl 3: Mixture of rice crumbs and ground almonds
Dip 1 breast at a time into the flour, then the egg, and finally the almond/rice crumb mixture.
Place chicken breasts onto parchment paper.
Bake for 40 minutes or until chicken is cooked through (no longer pink). You can use a meat thermometer, and the coating is golden brown.
Serve with rice, potatoes and a green salad.
