Lean Beef Lasagna

The lean beef takes out some of the fat from the recipe, which saves you the high cholesterol that comes with eating meat with too much fat in it. This simple easy lasagna recipe can also be made into a vegetarian healthy lasagna recipe by omitting the beef and adding in a few more vegetables. To make it more like the original lasagna recipe, you can add in some veggie meat to simulate the lean beef in the recipe. Makes one 9x13 inch pan, Serves 9

9 strips of lasagna noodles
10 medium to large fresh white mushrooms, sliced
1 medium sized white onion, chopped
2 cloves fresh garlic cloves, minced
2 Tablespoons butter
1 (960 ml) can tomato sauce
1 pound lean ground beef
3 Tablespoons dried oregano flakes
1/2 teaspoon salt
1/2 teaspoon pepper
1 (500 gram) container of dry cottage cheese
1 (425 gram) container of ricotta cheese
4 cups fresh spinach leaves chopped
175 grams (about 2 cups) grated mozzarella cheese
Mince the garlic, chop the onions into small pieces and slice the mushrooms in preparation of cooking.
In a large frying pan on the stovetop, melt 2 tablespoons of butter on low and add the garlic and onions to the pan.
Fry on medium low until transparent.
Add the sliced mushrooms, cover and cook for 10 minutes.
Transfer this mixture into a deep large cooking pot, that will become the sauce pot.
Place the hamburger meat into the frying pan you used for the onions and cook the hamburger meat until it is crumbly and no longer pink.
Set aside. Salt and pepper the meat while cooking. Stir in half of the dried oregano.
Once cooked transfer the meat from the frying pan into the large cooking pot.
If there is fat from cooking the meat, drain it off before adding to the other cooked ingredients.
Add the tomato sauce, stir together and simmer for about 20 minutes to bring out the flavors.
Add the remaining oregano, do a taste test and adjust your seasonings to your taste.
While meat sauce is simmering, fill a large pot with water, cover and bring to a boil.
Drop the 9 lasagna strips into the pot and boil for about 10 minutes to al dente.
Once cooked, drain out the cooking water.
While the lasagna noodles are cooking prepare the spinach and cheese layer.
In a large mixing bowl, stir together the dry cottage cheese, ricotta cheese and spinach. Set aside.
Grate the mozzarella cheese and set aside in a bowl.
Preheat oven to 375 degrees F.
Set out an assembly line of the meat sauce, noodles, spinach mixture and mozzarella cheese.
Use a 9x13 inch baking pan.
Ladle a layer of meat sauce on the bottom.
Put a layer of 3 lasagna noodles
Spoon on the spinach mixture filling and spread around evenly.
Place the next layer of 3 lasagna noodles.
Spoon on almost all of the remaining meat sauce, reserving only a small amount for the top layer.
Place the last layer of 3 lasagna noodles. Spoon on the reserved meat sauce.
Sprinkle the grated mozzarella cheese evenly on the top of the lasagna.
Cover with aluminum foil. Place into the oven.
Bake for 30 minutes. Remove from the oven and let set for 5-7 minutes before cutting the pieces.
