1 lb. cod, halibut, basa or white fillets of your choice, sliced into 1 inch wide strips
1/8 cup mayonnaise
1 Tablespoon Dijon mustard
1 cup Panko
1/2 teaspoon sea salt
1 Tablespoon olive oil
Preheat oven to 475 degrees F.
Line a baking sheet with parchment paper.
Place a metal cooling rack on top of the baking sheet.
In a small bowl combine the mayonnaise with the Dijon mustard.
Using a pastry brush paint this coating onto the fish strips.
In a shallow bowl, combine the panko, salt, and olive oil.
Working in batches, place each mustard covered piece of fish into the panko mixture and press to evenly coat all the sides.
Place each prepared strip onto the metal rack on the baking sheet.
Bake for 20-25 minutes turning the strips over once at the halfway mark in time.
If the fish is not baked through, continue to bake until done and browned.
Serve with lemon slices.
Note: You can substitute other white fish fillets for Basa.
