Cheddar Baked Potato

This is a printable recipe.
4 medium sized russet potatoes
1/2 cup milk or cream (more or less to get a nice creamy texture)
1 Tablespoon butter
3/4 cup grated cheese (more or less)
Preheat oven to 400 degrees F.
Scrub the potatoes with a vegetable brush, cut the tips of the ends and any blemishes you wish to remove.
Spear the potatoes with a knife right through.
Place on a lower rack in the oven and bake for 45 minutes or until done.
Poke a small sharp knife into the potato to test.
If it goes in easy and the potato is soft it is done.
Remove the potatoes from the oven and let them cool for 5 to 10 minutes.
Cut the potatoes in half lengthwise.
Spoon out the cooked potatoes leaving 1/4 inch of potato still in the skin.
Mash the removed potato with the butter and milk or half and half cream.
Spoon the mashed potato back into the potato skins.
Put onto a baking dish and place into the oven for 10 minutes to reheat the potato.
Remove from the oven and sprinkle on the grated cheddar cheese.
Place back into the oven for 5 minutes or until the cheese is melted.
Delicious served with sour cream. Season with salt and pepper to taste.
