Makes 1 serving
This is a printable recipe.
4 to 6 baby red potatoes (per person)
1-2 Tablespoons olive oil (depending how many potatoes you cook)
Wash the baby potatoes, dry them and cut them into thin slices. Pat dry.
Heat the olive oil over medium heat in a large frying pan and add the potato slices.
Cook uncovered and when they are brown on one side, flip the potatoes and brown the other side.
Cover with a lid, turn down the heat and cook until almost done, then uncover, turn the heat back up to medium and cook until done.
Season to taste with salt and pepper.
