6 medium russet potatoes, washed and peeled and placed in a bowl of cold water
2 Tablespoons butter
1/4 cup Parmesan cheese
6 bacon slices chopped into 1/4 inch pieces
1/4 cup feta cheese grated
Preheat the oven to 425 degrees F.
Grease a 2.5 L (6 quart) baking dish with butter.
Peel the potatoes and set each potato into bowl filled with cold water.
Once all are peeled, use a crinkle cutter cut the potatoes peeled potatoes 1/4 inch thick rounds.
Put the cut potatoes back into the cold water until all the potatoes are ready. (This is to keep them from turning black while you are preparing them all.)
Drain the water from the potatoes and pat the potatoes dry with a clean tea towel or paper towels.
In the baking dish, make a layer of the crinkle cut potatoes.
Sprinkle 1/8 cup Parmesan cheese on the potatoes. Put dabs of butter onto the potatoes.
Make another layer of potatoes.
Dab on the remaining butter. Bake for 35-45 minutes or until done.
While the potatoes are baking, put the chopped bacon into a frying pan on the stovetop and cook the bacon until nice and crispy.
Line a plate with paper towels and using a slotted spoon, put the cooked bacon bits onto the towels to absorb the bacon fat.
Set the cooked bits aside until the potatoes are ready.
Once the potatoes are baked, remove from the oven and sprinkle the grated feta cheese and bacon bits on top. Put it all back into the oven for 5-7 minutes to melt the cheese.
Delicious served with sour cream and freshly chopped chives or green onions.
