12 ounces dark chocolate chips, whole, un-melted (70% cocoa or higher)
5 Tablespoons coconut oil
3/4 cup organic brown rice flour (may be substituted for all purpose flour)
1 teaspoon salt
3/4 teaspoon baking powder
1 1/2 Tablespoons coconut palm sugar
1 Tablespoon flax seeds (optional added fiber)
1 Tablespoon white chocolate chips
1 Tablespoon raw cacao nibs
1 Tablespoon blanched almonds, chopped finely
Preheat oven to 350F.
Line a 12 hole muffin tray with paper liners.
Place half of the chocolate chips into a heatproof bowl (or a glass measuring cup with handle is easiest).
Place heatproof bowl on top of a small saucepan that has simmering water in it.
Use a rubber spatula to stir the chocolate chips as they begin to melt, being careful not to get even a drop of water in the chocolate.
As the chocolate melts, pour the remaining chocolate in and continue stirring until it is all melted.
Stir in coconut oil to melted chocolate to incorporate.
In a separate bowl, mix together flour, flax seeds, salt and baking powder.
In a medium bowl, beat eggs with sugar until incorporated.
Pour chocolate mixture into egg mixture and mix until smooth.
Mix in flour bit by bit until creamy.
Pour into muffin liners.
In a small bowl, mix together your topping ingredients and sprinkle on top of muffins.
Bake for 15-20 minutes until you can see that the tops are set, and a toothpick can be poked in and comes out clean.
