No Bake Chocolate Macaroons
Macaroon recipes contain almonds, coconut or other varieties of nut, which are held together by egg whites, and on occasion, condensed milk. Rather than using high-fat nuts, this no bake chocolate macaroons recipe uses large flake oats, which provides a chewy texture, as well as plenty of nutrition to these cookies. Large flake oats contain little fat and provide three grams of fiber per third cup. As a result, these chewy cocoa cookies are healthier than the average macaroon cookie. Additionally, large flake oats, provided they were processed in a facility without gluten products, should be gluten-free. These drop cookies also include cocoa powder which is very high in iron and dietary fiber and also contains plentiful amounts of flavonoids. For these reasons, these homemade cookies are a dessert one can feel good about eating. The best thing about this chocolate macaroon recipe is that they are chocolatey and chewy, and are no-bake. These cookies can be prepared in summer without heating up the kitchen.

Makes 48 cookies - Amount will vary with size you make the cookies.
2 cups granulated sugar
1/2 cup milk
1 stick (8 Tablespoons) butter
1/4 cup unsweetened cocoa powder
1 cup smooth natural peanut butter
3 cups old-fashioned rolled oats
1 teaspoon pure vanilla extract
1/8 teaspoon salt
To prepare, line a baking sheet with parchment paper.
In a medium size saucepan over medium heat, bring the sugar, milk butter and cocoa to a boil. Stir as needed and let boil for one full minutes.
Remove from the heat.
Stir in the peanut butter.
Stir in the rolled oats.
Stir in the vanilla and salt.
Use a teaspoon to make drops of the cookie mixture onto the prepared pan.
Let sit at room temperature until cooled and hardened.
Transfer to an airtight container and keep refrigerated for up to 3 days.
