Meatloaf with Gravy
Every household has a meatloaf recipe that is prepared for weeknight dinners, and there is a reason why; they are easy to prepare and packed with flavor. The breadcrumbs in meatballs or meatloaves soak up the added ingredients, as well as being a binder and tenderizing the meat. Ground meat recipes are also more economical than meals involving individual pieces of meat. Ground meat often goes further, because it can be purchased in large packages and separated for different meals. This meatloaf with gravy recipe is a take on the classic; it uses a mixture of dried herbs like basil and thyme in addition to Worcestershire sauce. Although fresh herbs are delicious in baked dishes, the dried versions are excellent in this easy meal, because they stand up to the heat better. While fresh basil will darken in the heat of the oven, dried basil will retain its color. This dish also comes with an excellent gravy you will want to include with all your quick and easy meals.

500 grams lean ground beef
500 grams lean ground pork
2 eggs, beaten
2 cups breadcrumbs
1 onion, chopped
3 cloves garlic, minced
1 carrot, finely chopped
1 stalk celery, finely chopped
1 teaspoon basil
1 teaspoon thyme
1 teaspoon parsley
2 Tablespoons Worchestershire sauce
1 teaspoon salt
1 teaspoon pepper
1/4 cup butter
1 small onion, chopped
1/4 cup all purpose flour
1 1/2 cups beef stock
Preheat oven to 350F.
Grease a 5x9 inch loaf pan with olive oil. In large bowl, mix together all meatloaf ingredients, first with a wooden spoon and then use your hands to combine the ingredients really well.
Place into the prepared loaf pan and bake for 1 1/2 hours. When the loaf is close to ready, make the gravy.
Melt the butter in a skillet over medium heat, add the onion and saute for 3-5 minutes or until lightly browned. Add the flour and brown lightly, stirring with a wooden spoon so the flour browns evenly and does not burn.
Add the beefstock, stirring to combine and work out any lumps.
Bring the gravy to a boil, then reduce heat and simmer for 5 minutes. Serve with the meatloaf.
