Chocolate Cream Cheese Frosting
Every person requires a decadent chocolate cream cheese frosting recipe in their back pocket, and this one is an easy version. Those who prefer chocolate cheesecake over plain will enjoy this especially because melted dark chocolate and cocoa powder get infused into the cream cheese until velvety and smooth. This frosting would be excellent piped onto cupcakes or spread over fluffy chocolate cake. The best dark chocolate to use in this cream cheese icing recipe is fair trade organic chocolate. By purchasing organic chocolate, you can be sure that you will not be consuming toxic pesticides. In fact, for a product to be fair trade certified, it will contain a very limited number of agrochemicals if any at all. Fair trade chocolate means that the farmer’s who produce the cacao beans and process them will receive fair pay for their work. Any chocolate will taste delicious in this frosting recipe, but organic or fairly traded chocolate will take on a whole new meaning.
Makes 4 cups-enough to fill and frost two 8 or 9 inch cakes.

2 1/4 cups confectioners' sugar
1/4 cup unsweetened cocoa powder
Pinch of salt
6 ounces cream cheese, at room temperature
3/4 cup butter, at room temperature
9 ounces dark chocolate, melted and cooled slightly
3/4 cup sour cream
Frosting In a bowl, sift the confectioners’ sugar, cocoa, and salt and stir together. In a mixing bowl, beat the cream cheese and butter with a mixer on medium-high speed until smooth.
Reduce speed to low and add sugar-cocoa mixture in increments. Beat until combined. Pour in melted chocolate and beat in.
Add the sour cream and beat until combined and creamy smooth. Frost your cakes.
This is best kept in the refrigerator because of the cream cheese in the frosting.
