Chocolate Frosted Creamy Eclairs
This chocolate frosted creamy eclairs recipe is a delicious combination of light, puffy dough, creamy vanilla custard and a chocolate glaze. These fun desserts are compact and contain an abundance of flavor. These tiny pastries are perfect for parties where people are less likely to be sitting. Of course, the dark chocolate frosting and vanilla bean laced cream will make you want to keep the whole batch for yourself.
The elegance of eclairs recipes may seem out of reach to many home cooks, but are surprisingly easy, even though they do take some time. The pastry cream recipe itself takes moments to thicken on the stove but requires all night to chill so that it is thick enough to fill the eggy pastry. The choux pastry is much simpler. You will be shocked by how the dough puffs in the oven with the minimal effort. This pastry dough can be adopted for other dessert recipes as well, like cream puffs, crullers or churros.

Vanilla Pastry Cream
2/3 cup granulated sugar
2 Tablespoons cornstarch
2 Tablespoons all purpose flour
6 egg yolks
2 cups whole milk
1 vanilla bean
3 Tablespoons butter
1/2 cup water
4 Tablespoons butter
1 Tablespoon granulated sugar
1/4 teaspoon salt
3/4 cup all purpose flour
3 eggs, room temperature
Dark Chocolate Ganache
4 ounces dark chocolate, chopped
1 cup heavy cream
Toasted sliced almonds
Pastry Cream (make this the night before.)
Whisk together sugar, cornstarch and flour.
Add egg yolks and whisk until smooth. Set aside.
In medium sized pot heat milk and scraped vanilla bean until it just comes to a simmer.
Pour a bit of heated milk into egg yolks and whisk.
Pour egg yolks into milk and bring to a simmer whisking the whole time. Once it starts to thicken turn off heat and whisk in butter.
Pour into a heat safe bowl and let cool.
Cover and chill overnight.
*Note if you do not want to use a vanilla bean, you can substitute 1 teaspoon of pure vanilla extract which you add at the end to the heated mixture once it cools down a little.
Preheat oven to 325®F.
Line a baking sheet with parchment paper.
In a medium pot bring to a boil water, butter, sugar, and salt. Add flour and mix until a dough forms and pull away from the sides.
Place dough in a mixer with a paddle attachment.
Add eggs one a time and beat extensively after each addition. Let cool a bit.
Put into a piping bag and pipe a line about 1 inch long onto prepared baking tray. Bake for 30 to 35 minutes, or until golden brown.
Set to cool, once cool enough to touch let them cool on a wire rack.
Dark Chocolate Ganache
Bring cream to a boil and pour hot cream over chopped chocolate.
Let sit for a couple of minutes and then stir to make creamy.
Punch hole into ends of eclairs and pipe pastry cream into middle of eclairs.
Dip top of eclair into melted chocolate let excess drip off.
Garnish with toasted almonds.
Stir in the confectioners’ sugar and the vanilla.
Stir in hot water, one tablespoon at a time, until frosting is smooth and has reached desired consistency.
Remove from heat, cool slightly, and drizzle over filled eclairs.
Refrigerate until serving.
