Super Simple Cucumber and Onion Salad
This summer, cucumber salads are all the rage. We see creamy cucumber salad recipes, crunchy cucumber salad recipes and in this case a super simple cucumber salad recipe that you can whip up with minimal ingredients and time. This cucumber salad recipe pairs well with just about any meal, but is particularly delicious alongside a spicy Indian inspired main dish. Be sure to eat the first day, as marinated salads are never as good the next day. This recipe calls for cucumber so here's some interesting information about the nutritional benefits of cucumbers. Here is what we love about cucumbers. They are: low in saturated fat, have no cholesterol, are very low in sodium, are high in calcium, high in dietary fiber, high in iron, high in manganese, high in pantothenic acid, high in phosphorus, very high in potassium, high in riboflavin, high in thiamin, high in vitamin A, high in vitamin B6 and very high in vitamin C. If you eat a lot of cucumbers though, beware that cucumbers are also on the EWG Dirty Dozen list which means they are one of the top 12 vegetables with the heaviest amount of pesticides, so if you are trying to cut out pesticides in your diet, than opt for organic cucumbers.
This is a printable recipe.
1 1/2 cups cucumber, washed, peel on, and chopped into quarters
2 Tablespoons of green onions, diced
1/2 medium sweet onion, sliced thin
1/4 cup white vinegar
2 Tablespoons olive oil
salt and pepper to taste
Wash your cucumber(s) in water with a splash of vinegar and scrub away any dirt.
Slice white onions very fine.
Dice green onions.
Place both kinds of onions into the bottom of a bowl and cover with vinegar, oil, salt and pepper.
Let onions sit for 10 minutes or so before topping with cucumbers.
Drizzle with olive oil and mix before serving.
