This family favorite soup recipe is a mish-mash of healthy vegetables, which makes it perfect for the cooler weather because of its warmth and nutrition. If you require nutritious family dinner ideas, this soup uses seven varieties of fresh vegetables, which will keep the entire family healthy through flu season. Fresh beets are high in the antioxidant, Vitamin C, which is paramount for maintaining a healthy immune system. If you would like to make this Borscht recipe more low-calorie, consider substituting the sour cream with some Greek yogurt. Greek yogurt will match sour cream in calories, but it has very high calcium, and sour cream doesn't contain as much. If the caloric intake is your concern, consider opting for low-fat sour cream or yogurt. This borscht is the best soup because it makes a large batch, which can be served for dinner one night and lunch the next. Serve this soup recipe with a loaf of homemade bread for a complete meal.

4 cups water
4 medium beets, julienned
4 medium russet potatoes, diced
2 carrots, diced
1 cup fresh green beans, cut into
1/2 inch pieces or you can use
canned red or white kidney beans, rinsed
1 cup shredded cabbage
1 medium onion, diced
2 Tablespoons butter
2 Tablespoons fresh dill, chopped
salt and pepper to taste
1 cup frozen peas
1 - 28oz. can stewed/diced tomatoes
- chopped into smaller sections if
they are large pieces

Add 4 cups of water to a large soup pot and bring to a boil.
Add beets to boiling water followed by potatoes, carrots, cabbage and beans.
The water should cover all the vegetables.
Add more water if needed.
As vegetables are cooking prepare your onions.
In a skillet fry diced onions in the butter over medium heat.
Watch carefully so that your onions cook to a golden brown.
Add onions to the pot.
Test vegetables for doneness.
When ready, add diced tomatoes, chopped dill and peas.
Bring to a boil and turn off heat.
Be sure to taste, adding more salt and pepper if needed.
To serve: ladle into a warmed soup bowl.
Add a spoonful of sour cream and freshly chopped dill to garnish.
