Potato and Dumpling Soup

4 large potatoes, peeled and rinsed
1 large onion, diced
1 Tablespoon butter
4 celery sticks, diced
1 carrot, peeled and diced
4 cups chicken stock
1 Tablespoon parsley, chopped fine
1 teaspoon dill, chopped fine
2 Tablespoons all purpose flour
1 teaspoon salt
1 cup milk
salt and pepper to taste

Put potatoes into small bite sized pieces.
Heat a large soup pot to medium heat, melt butter and fry the onions, celery and carrots for 3-5 minutes.
Add in potatoes and chicken stock with enough water to cover potatoes by one inch.
Bring to a boil then reduce heat to simmer.
Stir in the freshly chopped dill and parsley.
Cook for 20 minutes or until potatoes are tender.
To cream the soup, in a small bowl, use a fork to mix 2 tablespoons of flour and salt with cold milk until no lumps are left.
Stir milk mixture into the soup and bring to a boil to thicken soup.
Season with salt and pepper to taste.
Make the dumplings:
In a bowl combine the flour, egg, salt and 1/4 cup milk.
Drop the dough mixture, a teaspoonful at a time into simmering soup.
Do not stir until dumplings begin to float.
Optional: Serve with bacon bits and chopped green onions.
