When it comes to fun and easy baking recipes, Banana Bread has to be one of the easiest recipes out there. This easy banana bread recipe is a wonderful dessert recipe to make when you want to use up all of your ripened bananas. Most people will put their over ripened and browned bananas in the freezer instead of throwing them away, which not only helps to reduce waste, but gives us a great ingredient to use in recipes. There are many healthy banana bread recipes, three ingredient banana oatmeal cookies recipes and smoothie recipes that make use of these over ripened bananas. Over ripened bananas also tend to be sweeter than the unripened bananas giving recipes some great, natural and healthy sweetener. Before you toss your brown bananas in the freezer, prep them for future use by peeling them and cutting them into smaller pieces. This will make them easier to add to your blender or to add into a batter.***
Serving Size: Makes one 9 x 5 inch loaf or one 9x9 inch pan.

2 large bananas, mashed
1/2 cup buttermilk *
1 1/2 teaspoon baking soda
2 1/4 cups all purpose flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup butter, at room temperature
1 cup packed brown sugar
1 teaspoon pure vanilla extract
1 cup chocolate chips, divided
Preheat oven to 350˚F and grease a 9x5 inch loaf pan or 9x9 inch cake pan with butter.
In a mixing bowl, stir together bananas, buttermilk and baking soda.
Let sit for 5 minutes.
In another bowl, stir flour, baking powder and salt and set aside.
In a large bowl, use an electric mixer to beat butter with brown sugar until creamy.
Beat in the egg, vanilla and banana mixture.
Stir in flour mixture until combined.
Stir in 1/2 cup chocolate chips.
Transfer to prepared pan.
Sprinkle remaining chocolate chips on top.
Bake for 35-40 minutes in a 9x9 inch pan, or if using a loaf pan, around 50-60 minutes.
A toothpick inserted in the center that comes out clean indicates that it is done.
Let cool in pan on rack for 15 minutes.
Turn out onto rack and let cool completely before cutting.
If you do not have buttermilk, just add 1/2 Tablespoon lemon juice or white vinegar to 1/2 cup regular milk and let stand for 5 minutes, then stir.
