Serving Size: Makes 12 4-inch pancakes
This is a printable recipe.
1 1/2 cups all purpose flour
1 Tablespoons granulated sugar
1 Tablespoon baking powder
1/2 teaspoon salt
1 egg, beaten
1 3/4 cups milk
2 Tablespoons melted butter or oil
+ extra oil for frying
In a medium bowl, stir flour, sugar, baking powder and salt.
In a medium bowl, beat together the egg, milk and melted butter (or vegetable oil).
Blend the liquid ingredients into the dry ingredients.
Beat only until combined.
Add a teaspoon of vegetable oil to a large frying pan.
Heat to medium.
Use a 1/4 cup measuring cup for each pancake.
Pour the batter onto the heated surface.
Cook the pancakes until the surface is covered with bubbles and the edges lose their gloss (about 4-5 minutes).
Flip and cook second side until golden brown.
Repeat with remaining batter (As needed, add more oil to the pan).
To keep the finished pancakes warm, you can heat an oven to 200˚F and place cooked pancakes onto a pan until ready to serve.
