This pavlova recipe is an elegant display of crispy meringue, freshly whipped cream, and summer berries. Pavlova is an Australian dessert that is based upon a meringue. Meringues are beaten egg whites that have been stabilized with sugar until very stiff and glossy. Since this pavlova recipe produces a large amount of meringue mixture, it bakes to be very crispy on the outside and soft in the middle. Meringue cookies would be baked to an entirely crisp texture throughout.
The bonus of this dessert is that it is also ideal for those on a gluten free diet because it doesn’t contain any wheat flour. Instead, this dessert recipe uses cornstarch as a stabilizing component. Cornstarch doesn’t naturally contain gluten, but you will want to take a look at where and how your particular cornstarch was produced since it may have become contaminated with gluten.

4 egg whites
1 1/4 cups caster sugar (fine sugar)
1 teaspoon white wine vinegar
1 teaspoon cornflour
1 teaspoon vanilla extract
1 cup heavy cream, whipped
2-3 cups fresh chopped or whole berries
3 Tablespoons confectioners’ sugar
Preheat oven to 300˚F.
Cut out a piece of round parchment paper the size of a dinner plate and place onto a baking sheet.
In a glass bowl, beat egg whites until they form stiff peaks.
Add sugar one tablespoon at time until glossy.
With a large spatula, stir in vinegar, cornflour and vanilla.
Spread the meringue on the parchment paper circle.
Make the sides a little bit higher than the center, like a well.
Bake for 1 hour or until a toothpick inserted in the center comes out clean from center.
Leave in oven and turn off heat.
Let it cool entirely inside the oven.
Once cool, remove and place on your serving tray.
Whip the cream until soft peaks form.
Spread whipping cream over meringue.
Arrange berries creatively on the top.
Dust with confectioners’ sugar.
