This beautiful looking and mouthwatering Plum Cake recipe is definitely one of the cake recipes you will want to try for yourself. Two cups of fresh, sweet plums give this cake recipe a nice, fruity flavour. Plums are a delicious fruit all on their own and they have some great nutritional value too. Plums contain high levels of vitamin C and vitamin A, as well as high levels of dietary fibre. They also contain a very high amount of sugar, so as with anything that has a high sugar content, eat in moderation. You don't need a special occasion to bake a cake, this cake can be one of the dessert recipes you serve up to have a treat after dinner or as an afternoon snack. Choosing to make dessert recipes from scratch is also usually healthier than purchasing the store bought options. 1/3 cup butter, at room temperature
3/4 cup granulated sugar
3 Tablespoons thick yogurt
1 cup all purpose flour
1 teaspoon baking powder
1/3 cup buttermilk
grated peel of 1 fresh lemon
2 cups sliced fresh plums
1/2 cup packed brown sugar
1/8 teaspoon ground cinnamon
Preheat the oven to 350F.
Lightly grease and 8-inch pan with butter.
Place the butter and sugar into a mixing bowl and beat with an electric mixer until creamy. Add the yogurt and beat in.
Stir the baking powder into the flour.
Add the flour mixture and buttermilk to the butter mixture, beating in alternating the two until combined.
Mix in the lemon peel.
Pour into the prepared pan.
Wash and pit the plums, then slice.
Arrange the plums into the batter, pressing some gently down and leave some at the top.
Sprinkle with the brown sugar and cinnamon.
Place into the preheated oven and bake 40 minutes or until a toothpick inserted in the center of the cake comes out clean.
Remove and place onto a cooling rack.
Let cool down to just warm before cutting and serving.
