This cheesy enchilada recipe is a savory blend of cheese, chilies, chicken and enchilada sauce baked in a casserole dish. If you and your family are fans of Mexican cuisine, this enchilada recipe combines traditional Mexican flavors, like cumin, cilantro, and lime. This dish uses large flour tortillas which have a neutral taste compared with corn tortillas. On occasion, corn tortillas can be found at the grocery store, but are usually smaller in size. Of course, you could use corn tortillas in this chicken recipe, but if they are smaller than the flour tortillas you will require more of them. Corn tortillas are also the perfect replacement for flour tortillas if you will be serving those with gluten-free diets.
