Pan Fried Green Tomatoes
This pan fried green tomatoes recipe is a healthy version of other versions, which are traditionally coated in breadcrumbs and fried in vegetable oil. Instead, this green tomato dish coats the tomatoes in almond flour and fried them in coconut oil. Almond meal is finely ground almonds. If you can’t find it already processed in the store, you can prepare your own at home with whole almonds. The almond flour makes this green tomato recipe gluten-free so that those suffering from celiac or a gluten allergy can enjoy them as well. These tomatoes are excellent if you are searching for healthy dinner ideas for throughout the week. Besides the healthier alternatives to the usual breading and oil, tomato nutrition includes very high amounts of vitamin C, vitamin A, and B6. This tomato recipe would be excellent as part of easy meals through the week because they take moments to prepare. Simply serve them alongside some fried eggs and have breakfast for dinner or try them with a seared steak.

2 medium to large sized green tomatoes
1/2 cup of coconut oil (more or less)
1/2 cup of almond meal or all purpose flour (more or less)
1/2 teaspoon salt
1/2 teaspoon pepper
Wash and slice the tomatoes about 1/4 to 1/2 inch thick.
Beat the eggs in a bowl.
Heat the coconut oil in a frying pan over medium/high heat.
Dip the tomato pieces into the egg, then the almond meal or flour.
Place each coated piece of tomato into the heated oil in the pan.
Cook, flipping as needed until to cook evenly until nice and browned and crispy. Don't overcrowd, do in batches if necessary and add a little extra coconut oil as needed as well.
Place cooked tomatoes onto a plate lined with paper towels to absorb and excess oil.
Good right away or even the next day.
