BBQ Honey Orange Chicken
Delicious, tender and juicy chicken grilled on the barbecue can be yours with this yummy BBQ Honey Orange Chicken recipe. This grilled chicken recipe can be made with whatever type of chicken meat you have on hand, so you can use chicken breast, chicken thighs or drumsticks. Buying chicken breasts all the time can get quite pricy, so switching it up once in a while is great. Thighs are generally a bit more affordable, and you can purchase them without the skin or fat on them too to make it a leaner choice. 10 pieces of chicken,(your choice of chicken pieces)
1/2 cup orange juice (fresh squeezed is best)
1/4 cup Dijon mustard
1/4 cup hot sauce
1/4 cup olive oil
1 Tablespoon orange zest, grated
4 Tablespoons butter
1/4 cup freshly squeezed orange juice
1/4 cup BBQ sauce
1/4 cup honey
2 Tablespoons Dijon mustard
1 Tablespoon orange zest, grated
1/4 teaspoon allspice
In a large glass bowl, stir together the orange juice, mustard, hot sauce, olive oil and orange zest. Add the chicken pieces and toss to coat. Put a plastic wrap over the bowl and place into the refrigerator for a minimum of one hour or you can do the day before the BBQ and let marinate overnight.
When you are ready to cook the chicken, remove from the refrigerator and let it sit until it is room temperature. Turn the grill onto medium heat.
Take the chicken out of the marinade and blot each one dry with paper towels.
Place onto the heated barbecue and cook for five minutes on each side. If you have a grilling basket to use, you can cook them in there. It is very easy to flip the chicken when they are in these grill baskets.
Turn the grill down to medium low heat and close the grill.
Cook for 25 minutes longer or until the chicken pieces are cooked through. Use a meat thermometer if you have one. The temperature should be 165F.
Prepare the glaze while the chicken is cooking.
Melt the butter is a small saucepan over low heat either on the stove top or on other grill. Add the orange juice, BBQ sauce, honey, mustard, mustard, zest and allspice. Stir into the melted butter to combine.
Divide in half and save one half for drizzling later when the chicken is cooked.
Use a silicone basting brush to glaze one side ofeach piece of chicken and cook for 2 minutes. Flip over, baste brush the 2nd side and cook another 3 minutes.
Remove the chicken and place onto a platter. Drizzle on the remaining glaze and serve.
*Note: You could also bake the chicken in the oven at 425F. Line a baking sheet with aluminum foil to catch the drips, place a lightly oiled rack into/onto the prepared and place the chicken pieces onto the wire rack.
