Tomato Salad with a Simple Vinagrette
The best salads are the easy salads, like this easy to make Tomato Salad with a Simple Vinaigrette recipe. Some may find it hard to include the daily recommended amounts of vegetables in their diets, but with a salad like this one, you should have no problem at all. This is one of those easy salads that you can make in a few minutes, and that you don't have to put a lot of effort into. Yet, it tastes amazing and so fresh. For this recipe you will need a lot of tomatoes, 5 large beefsteak tomatoes to be exact. You can also double or triple the recipe if you need more servings though. Tomatoes are excellent for our health too, and tomato nutrition contains a very high amount of vitamin A, vitamin B6 and vitamin C. This salad recipe can be served over a nice pile of fresh, organic romaine lettuce, or other greens, or, it is also great over some cooke brown rice.***

3 tablespoons minced shallots
3 tablespoons red wine vinegar
1/2 teaspoon kosher salt plus more
1/2 teaspoon sugar
1/2 cup extra-virgin olive oil
5 large ripe beefsteak or heirloom tomatoes, cut into 1/2" slices
Freshly ground black pepper
1/2 teaspoon dried oregano
10 fresh medium basil leaves, torn into approx. 1/2" pieces
Combine shallots, vinegar, 1/2 teaspoon salt, and sugar in a small bowl. Gradually whisk in oil to blend. Set vinaigrette aside.
Arrange tomatoes on a large platter. Season with salt and pepper and dried oregano.
Scatter basil on top.
Whisk vinaigrette again; drizzle over salad.
