1 2/3 cups all purpose flour
1 cup granulated sugar
1/4 teaspoon baking soda
1 teaspoon baking powder
3/4 cup salted butter, at room temperature
3 egg whites
1/2 cup sour cream
1/2 cup milk
2 teaspoons pure vanilla extract
1 cup butter, at room temperature
4 cups confectioners' sugar
2-3 Tablespoons cream
1 teaspoon pure vanilla extract
Yellow and pink organic food gels
Preheat the oven to 350F.
Line a 12 hole muffin tin with paper liners.
In a large mixing bowl, stir together the flour, sugar, baking soda and baking powder.
Using an electric mixer on medium speed mix in the butter and egg whites.
Mix in the sour cream, milk and vanilla. Beat on medium speed until smooth but do not over mix.
Divide the batter into the cupcake liners.
Place into the preheated oven and bake for 18-20 minutes or until a toothpick inserted in the center of a cupcake comes out clean.
Remove to a cooling rack. After 5 minutes move the cupcakes directly onto the cooling rack and let cool completely befor frosting.
Place the butter into a mixing bowl and using an electric mixer beat until smooth. Add 2 cups of the sugar and mix in.
Add 2 Tablespoons of the cream and the vanilla and mix in.
Add the remaining confectioners sugar and mix until you have a nice creamy consistency. You can always add either more confectioners' sugar or milk to make the frosting a good piping consistency.
Divide the frosting into two bowls.
Put a few drops of pink gel in one bowl of frosting and a few drops of yellow gel in the other. Stir the colors in.
You will need two piping bags and whatever variety of tips you like to frost decorate your delicious cupcakes.
