4-5 whole russet potatoes (medium size)
2 Tablespoons olive oil
1/4 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1/4 teaspoon pepper
1/4 teaspoon dried parsley
1/4 teaspoon dried rosemary
1 Tablespoon grated parmesan cheese
Preheat oven 375F.
Line a cookie sheet with parchment paper and lightly oil the parchment paper.
Wash the potatoes and dry with a paper towel. If there are bruises or black blemishes cut them off.
Slice the potatoes 1/4 inch thick and place them into a large bowl.
Pour the oil into a small bowl, add the spices and cheese and stir in. Pour the mixture over the potatoes and toss to coat well.
Spread the potatoes onto the baking sheet and do not overlap them. They will be crispier if you lay them out in a single layer.
Place into the preheated oven and bake for 20-30 minutes or until they are crispy on the outside and cooked on the inside.
Serve nice and hot!
