Creamy Potato Salad
We love potato salad, it's a great recipe to add to any meal, especially a barbecue meal. So here's a delicious potato recipe for Creamy Potato Salad from Grandma's collection. This potato salad recipe includes fresh and healthy ingredients including onions, eggs, celery and even pickles. The pickles give a nice little tang to to flavour. Just like any potato salad recipe, this recipe has mayonnaise in it. There is nothing better in a potato salad than classic, creamy mayonnaise, some people like to use a dressing like Miracle Whip, so you could use that if you are partial to the whip, but the recipe tends to taste the best with regular mayonnaise. Potato nutrients include a high amount of potassium, vitamin B6 and vitamin C. They are very low in sodium and fat and have no cholesterol. 6 medium potatoes
1 cup thinly sliced celery
1/2 cup finely chopped sweet red onion
1/3 cup sweet pickle relish or chopped mustard pickle
1 1/4 cups mayonnaise
1 teaspoons celery salt
2 teaspoons apple cider vinegar
1 teaspoons prepared mustard
1 teaspoon salt
5 hard boiled eggs, cooled and coarsely chopped
Cook potatoes in boiling, salted water until tender, don't overcook.
Drain well. Peel and cube potatoes. Transfer to a large bowl and let cool to room temperature. You can speed this up by putting them into the refrigerator.
Add celery, onion and sweet relish.
Combine mayo, celery salt, vinegar, mustard, and salt. Add mayo mixture to potatoes.
Toss lightly to coat potato mixture.
Carefully fold in the chopped eggs.
Spoon the mixed potato salad into a decorative salad bowl.
Cover and chill thoroughly before serving.
