Creamy Mashed Potatoes
Mashed potatoes are an essential of the dinner table, but often become lumpy and lack the smooth texture of this creamy mashed potatoes recipe. The key to excellent mashed potatoes is using the correct kind of potato. Starchy potatoes, like russets, are good choices, because they absorb other ingredients like butter and cream very well. The one thing you will want to be sure of when preparing russet potato recipes is not to overwork them too much, or else your mixture will become gloopy and unappealing. This delicious potato recipe is an excellent base for whatever flavors you enjoy. If desired, try cooking some kale in the potato pot, and pureeing it with the potatoes. Alternatively, mix in some roasted garlic for a garlic mashed potato recipe, or some finely chopped parsley. Although mashed potatoes have an ill reputation due to the high content of butter and cream, potato nutrients include high amounts of potassium and vitamin C.

6 russet potatoes, medium to large
1/4 cup butter, at room temperature
1/2 cup heavy cream
1 teaspoon salt
Peel and cut the potatoes into chunks.
In a large pot of water of simmering water add the potatoes.
Bring to a boil and cook until fork tender, 20 to 25 minutes.
Drain the potatoes in a large colander. Place them back into the dry pot.
Cream the potatoes, allowing all the steam to escape before adding in all the other ingredients. This make them less watery. You can do with an electric mixer or a hand masher.
Add butter, cream, and salt, beat until creamy.
