King Ranch Mac and Cheese

What are you planning for dinner? Are you feeding a group of grown ups this weekend? Wouldn't it be great to come up with a menu plan that didn't take very long to prepare, was economical to make and was bursting with some interesting flavors! This King Ranch Chicken Mac and Cheese recipe is going to offer the group good old fashioned comfort food with a little bit of pizazz.

The recipe uses not only the pasta, but dices tomatoes, spicy green chilies, a little chili powder, and cumin. Add to this some chicken, cheese, and Doritos chips, and you have quite a one dish meal! Once these ingredients (and a whole bunch more) are combined, they are baked in an 11x17-inch baking dish or a large cast iron pan. I am a passionate lover of these one pan meals because they always signify that at the end of the meal, you do not need to face a mountain of pots and pans. This is the best type of meal when you are entertaining as you also get to 'enjoy the dinner party'. If you have children with more adventurous pallets, they may well love this macaroni with a Mexican flare.

This type of recipe always allows for some personal adjustments. For instance, it calls for green bell peppers. A lot of people love them but for those that don't you can so easily substitute a bright red bell pepper in the recipe. A beautiful fresh green salad with avocados and tomatoes would go so well with this meal. This recipe also calls for cooked pre-cooked chicken, so if you don't want to make the chicken yourself you could always get a Rotisserie chicken and strip it down.
