Lemon and Poppy Seed Loaf

This has been a recipe that I have had around a long time in my own life, my mom would make Lemon and Poppy Seed Loaf when I was younger, and still does! This is a super simple and quick loaf cake to make that is great for a dessert, a snack, to have with coffee or tea or even for breakfast if you like sweet things for breakfast! Lemon and Poppy Seed Loaf has a nice light flavour of lemon, and is a nice and light cake too, so it would be like a muffin for breakfast, perfect just on it's own, or you could put some butter on it too.

This is one of those recipes you always keep on hand to make in a pinch, because it is just so simple and easy, and everyone tends to really enjoy it! The poppy seeds are always a nice touch, even though you can't really taste them, they give an nice little bit of a crunch to the cake, and add some interesting colour too. The cake will be a nice light shade of yellow, with a golden brown crust, a perfect cake for spring or summer or really anytime you are in the mood for some lemon!

My mom sometimes makes her lemon poppyseed cake as a load like this, or for a special occasion, she will do it in a bundt pan and ice it with a lemon sugar glaze that really complements the cake when it is drizzled on top of it and looks really lovely too! You could even top it with some raspberries or blueberries, especially if they are fresh from the garden, those flavours would really meld quite nicely with this Lemon and Poppy Seed Loaf.
