The key to a good pastry, is to not over work the dough! You can't over work the dough, other wise your treats that are supposed to be nice and light and fluffy, will be terribly hard like little rocks or bricks. We don't want that do we? So just make sure you are super gentle with the dough and make sure not to over work it at all. These awesome little scones are great for spring or summer, with a super nice light sweet yet tart flavour, they are sure to be loved by everyone, especially if they are fresh out of the oven!
Scones go way back as a part of British culture, having scones with tea, is a staple in England and even Scotland and Ireland.
