To make the lemon curd that you'll need for this recipe you'll need 1/2 cup of fresh lemon juice, 2 teaspoons of freshly grated lemon zest, 1/2 cup sugar, 3 large eggs and 6 tablespoons of unsalted butter cut into small pieces. Using a whisk, you'll whisk the lemon juice, lemon zest, sugar, and eggs in a saucepan. Then, you'll stir in the butter and cook over low temperature. Keep whisking until the curd is thick which will take about 6 minutes. Then, pour into a bowl and allow it to chill completely. You can make this lemon curd ahead of time and chill it for up to a week in the fridge. Or you can buy some lemon curd to use in this recipe if you prefer.
For the crust of this easy cheesecake recipe, you'll need the Lemon Oreos and melted butter which is really simple. All you'll do is crush the Lemon Oreos in your food processor and mix in the melted butter to mix for another minute to combine. Then press the mixture into a springform pan like you would with a regular cheesecake recipe and set aside. For the filling, you'll need some cream cheese at room temperature, 3 eggs, granulated sugar, vanilla and the lemon curd you made or bought. All you do is mix the cream cheese, sugar, eggs, and vanilla on low speed in your mixer then pour half of the cheesecake batter into the springform over the cookie crust and spread it evenly. Then, pour half of the lemon curd on top of the cheesecake and swirl it with a knife, then keep repeating with the rest of the cheesecake batter and the lemon curd. You'll then bake the cheesecake for 40 to 45 minutes and then take it out of the oven to cool and then chill in the fridge.
