Lemon Meringue Bars
This is a lovely recipe for Lemon Meringue Bars, a simpler version of lemon meringue pie. Sometimes, the pure flavor of something is all that you need, and that can certainly be said for the flavor of lemon. This pie is some times made with Meyers lemons, which combine the taste of lemon and mandarin oranges (it is believed) to create a much softer lemon flavor. Regardless, though, whether you make this dessert using traditional lemons or the Meyers variety, it is a wonderful dessert. It is not overly sweet, and the flavor of lemon is unique and delicious and fresh in these bars.
This dish takes a bit of work, but not too much. The base is a classic flour one that is pressed in to the pan and then baked. A home made meringue of eggs and sugar is put on top and the whole thing is returned to the oven for more baking. This home made meringue takes a bit of skill to prepare, but mostly to ensure it does not burn, which can happen easily. The fresh grated lemon in the filling ensures a tart and tangy flavor that you will love. The coup de grace for this recipe is in the meringue. Although it is decadent, since you have labored this much to produce this pretty dessert, consider at least doubling the number of egg whites that you use to make the meringue, then pile it as high as possible on the dish. This will make this dessert really spectacular. Bake it as usual, and you will get all kinds of “oohs” and “ahs” when you bring this to the table.
This is a classic dessert made a bit simpler, but every bit as delicious, by making it as a bar rather than in a pie. Be sure to try it, if you have not had a home made lemon meringue pie or bars before. It is truly wonderful.
