Lemon Meringue Fudge
A lemon meringue fudge is not like all of the other fudge recipes. It's bursting with lemon flavour and a delicious lemon curd topping. This is a great recipe to make if you love fudge, but you are more of a lemon dessert fan. Aimee from Shugary Sweets shares that this is her best recipe for fudge candy yet. Even though that's a pretty bold statement to make, she has many other innovative recipes for fudge candy on her website already. She's created recipes for cinnamon roll fudge, cookies and cream fudge, strawberry fudge and even some root beer fudge which sounds really good. Since she really loves lemon dessert recipes, she likes this recipe the best. This recipe is much different from your regular fudge recipe because it doesn't include chocolate or cocoa of any kind. Typically, a fudge recipe will include cocoa powder or chocolate chips in it. It will also include white sugar or powdered sugar, milk, butter and vanilla. Some recipes for fudge candy will use sweetened condensed milk or cream instead. It depends on the recipe you're following so always make sure to use what the recipe recommends.
This recipe for fudge candy calls for white granulated sugar, heavy cream, unsalted butter, salt, white chocolate chips, marshmallow fluff, lemon zest, lemon curd, miniature marshmallows and graham cracker crumbs. So while this easy dessert recipe does include some white chocolate chips, it doesn't require cocoa or real chocolate in it which is what regular fudge recipes will call for. Some don't even consider white chocolate to be chocolate because of the absence of cocoa which is what makes chocolate rich. White chocolate is made using cocoa butter, which is part of the cacao bean, but it's the fat rather than the chocolate. You may notice that chocolate will have white spots on it if it sits around for too long, that's the cocoa fat separating from the chocolate. The cocoa butter will come in a block or in chunks and it kind of looks like a bar of soap. It's usually best to look for it a health food store or buy it online if you can't find it in your area. Always make sure that it's food grade cocoa butter as some of it is used for making bath and body products as well. Then, the cocoa butter is mixed with sugar and cream to thin it out, and it's placed into moulds to set.
The lemon zest is a crucial part of this recipe for fudge candy too as the zest of the lemon is what really brings that bold burst of lemon flavour into any recipe. If you find yourself using lemon zest for many dessert recipes or other recipes, there is an easy way to get the zest off of a lemon and to store your lemons and zest as well. The best way to do this is to wash your lemons right away when you get them home; then you can put them in a freezer safe container or sealed bag. Once the lemons freeze, you can then use a hand-held grater and grate the lemon zest off of the rind of the lemon into a bowl and then save the zest in another freezer safe bag or container for later use. Or, you can use it right away. Lemon zest is also great for drink recipes, and lemon wedges are always great to add to a drink or with a salad.
