The shortbread crust is what I will call one of the secret ingredients in this dessert. The Walker Shortbread cookies has a long history and are a popular cookie choice. Way back in 1898 Joseph Walker, 21 at the time had a desire to make the finest shortbread in the world. He took a full year and came up with a perfected recipe. His business was born, and he grew it with and expended shop and horse and cart deliveries until the 1930's. During the 1930's to 1950's his family expanded and his two sons joined the business, with fresh blood came fresh ideas, and the company grew. The 50's to 70's were a time where the company stood true to the use of butter in their product. As a matter of fact, their recipe contained only four ingredients. Four, sugar salt and butter. By 1961, the families had grown and with them, the business and by 1970 Walker shortbread cookies were in 60 countries worldwide. From then until now the company has continued to expand and win awards for their quality baking. The exciting part about these cookies is they stayed true to their natural four ingredients. No wonder this crust in our featured recipe tastes so good!
